I have had Alice on the Sunset, also, and she was quite entertaining. I asked about the Tilapia fish and she replied, " You don't want that- it's hospital food. . ". Miss Polly on the Texas Eagle is sort of entertaining in a different way.

Yup, that sounds like Alice.

I've never ridden the Capitol Limited myself, but it sounds a lot like my experiences on the Sunset Limited.

I've tried the Tilapia on Amtrak a few times and it is one of the worst. I thought the first time it must have been prepared wrong but after a few tries it's def. not the cook. I'll stick with crab cakes & Lamb Shank now! ha.
