Last time you and I rode #20 NOL-WAS on the way to the Gathering we ate Breakfast as we crossed the Causeway BEFORE reaching Slidell. YMMV

There are so many factors that go into when a train (particularly a long-distance train) can be slotted into a schedule that, even if Amtrak wanted to, they couldn't practically hinge things around avoiding meal times.
