Okay, I'm wondering how many cars were ordered (and are still in service) for each type of car, including Amfleets, Superliners, and any equipment Amtrak or state agencies are looking into buying.

So, currently, there are the:

The expected end of service life is a stretchable number, depending on whether there is funding to buy new equipment, how well the old equipment is holding up, and what it is taking to maintain the old equipment. You should check out the Amtrak Fleet Strategy Plan V2 which covers their purchase plans, the projected service life, and the average years & mileage for each line of equipment. The Fleet Strategy Plan is to be updated every year, so it is going to be periodically revised to reflect their current thinking and most importantly, how much funding Amtrak has to buy anything. V2 was published in February, 2011.

Addressing some of the future purchase items in your original post, Amtrak has placed orders for:

130 Viewliner IIs (55 baggage, 25 baggage-crew dorm, 25 diner, 25 sleeper cars)

70 ACS-64 Siemens Electric locomotives to replace the AEM-7s, HHP-8s on the NEC and Keystone East. Amtrak took out a $562 million RRIF loan to pay for them.

IIRC, Wisconsin ordered 2 Talgo trainsets, Oregon ordered 2 Talgo trainsets. With no further orders likely from WI, the 2 Talgo trainsets are it for WI. Suspect that WA state will eventually buy the WI Talgos.

Funding from HSIPR grants has been awarded to California and the mid-West states to buy a total around 120 Bi-level coach cars and some 30? diesel locomotives. No order has been placed, doubt if the request for bids have even gone out because much of the bi-level purchase grants were awarded in May from the reallocation of the Florida HSR funds. The funding for much of the bi-level purchase is at risk if the House Republicans succeed in getting $1 billion of the unobligated HSIPR stimulus grants rescinded.

Amtrak has requested FY2012 funding to buy 40 additional Acela coach cars to add 2 cars to each of the 20 Acela consists. Amtrak will probably end up having to get a RRIF loan to pay for them.

Beyond that, the rest is on Amtrak's equipment purchase wish list which is in search of funding to pay for it and some direction from Congress. The priority list in the V2 plan is to replace the 145 Amfleet IIs, ~ 250 Superliner Is, start the acquisition process for new diesel locomotives to replace the P-42s.
