My recommendation would be to get two roomettes across the hall from each other. This guarantees the best opportunities for being on the correct side to see the best scenery. Each of you would have a lower bed to sleep in.

As you leave Denver, the best side is the right side. Then after you leave Granby the best side is the left as you go through canyons along the Colorado River. Then about 1 hour before Glenwood Springs the best side is the right side as you follow the Colorado River through Glenwood Canyon. After Glenwood Springs it does not matter so much which side you are on.
After you leave Truckee on the last day, the best side to be on is the right side as you ascend Donner Pass. Then as you descend, the left side is the best side for scenery. After Colfax, it does not matter so much. Then after Martinez, there is the San Francisco Bay along the right side.
 
The CZ is probably the single most popular long distance train for scenery, and it sells out sleepers fast. Assuming you mean this coming May, you need to hop on this right away. There is a new, non-Amtrak website for checking prices across a series of dates, railforless.us. It has just gone live, so you may need to experiment with it a bit, but Amtrak doesn't make it easy to check multiple dates.

Oh, and prepare for some sticker shock on what you find. But, then, how often do you have a 50th wedding anniversary?
