If you are a single traveler on a long distance train with sleeper accommodations, when ordering breakfast, are you allowed more than one of the menu selections without extra charge? In other words, if I order French Toast, may I also have Porridge or Corn Flakes without an extra charge? I can appreciate that this may not be the case with the other meals.

Unfortunately not - Amtrak will only allow one entree and its listed side(s) per ticketed passenger. I guess they figure the base rail fare each passenger pays in addition to the single accommodation charge offsets the fee of preparing and serving the meal. Some crews are more lenient than others, though, so it never hurts to ask even though you will probably be told no.
