Years ago, I can't recall which train I was on, there was a cafeteria-type arrangement where you took your tray and scooted it along a rail and chose which items you wanted. Like a buffet.

Another time, on the Ann Rutledge, also years ago, there was a snack bar behind the first class section.

For the past several years, each train I have been on had the dining car and the cafe in the lower level of the observation car.

Since I haven't traveled all the train lately, I was wondering if the other options from years ago are now history???
 
The Buffet cars did get retired a few years back. I think there were issues with patronage, food quality, and managing the buffet, so they switched to traditional sit down service. The Single Level trains do still have a snack bar as you described on the Anne Rutledge, but it has the same food as its Superliner counterpart.
