I am doing 2 separate legs using points, one from Chicago to Minn, and then a week later  Lees Summit (KC area) to Chicago via St. Louis.  I will have one large suitcase and a carry-on.  2 questions:

1.  I see there is no checked baggage on a couple of those legs.   Is there room for my suitcase and a carry-on in coach?

2.  Is there a reason to wait for maybe a better deal or am I better off booking now?  Do these trains fill up?  I will be using points I think.

Chances are that fares (and thus points needed) will go up, rather than down. There is ample room for your luggage in the rack above your seat or (on Superliners) in the luggage rack on the lower level.
Take it easy .......

Take the train instead and enjoy the ride!

The view is much better at 3 feet than it is at 30,000 feet!

As far as bags on the Lee's Summit - St. Louis - Chicago leg, yes, there is space for your bags. There are shelves at one end of each coach car as well as overhead luggage racks.

The reference to Superliners in the prior post refers to the cars used on your Chicago - (somewhere in) Minnesota leg.

There's almost always plenty of room on the luggage rack of the Empire Builder (the Amtrak train that serves Minnesota.) Even with the ability to check luggage now since my home station is MSP, I don't often do unless I have more than the carry-on allotment permits as it's just easier to not have to go to the carousel at St. Paul Union Depot.

For the Lee's Summit - St. Louis - Chicago trip, I would not wait.  The Illinois service (I suspect Missouri is the same) seems to follow the old scheme whereby fares depend on how many tickets have been sold; and revenue manages don't drop the price if tickets are not selling as expected.

From time to time the long distance trains do seem to experience price drops when tickets aren't selling.  Nevertheless, although you didn't say when you are travelling, it is Summer, it's unlikely EB prices will drop.  Unless, of course, it experiences some long term disfunctionality that drives away customers.
